This recipe was sent in on the Recipe group I own, It was delicious! Even Jake loved it, and he strongly dislikes sour cream..
Fiesta Chicken Enchiladas
2 cans green chili sauce, divided
2 cups chopped cooked chicken
1/2 cup sour cream
2 cans (4 oz. each) chopped green chilis, undrained
1/3 cup chopped green onions
1/4 teaspoon salt
2 cups (8 oz) shredded Monterey Jack cheese, divided (I used a lot more than this)
10 flour tortillas
Preheat oven to 350. Pour 1 can enchilada sauce into 13x9-inch baking dish. In large bowl, combine chicken, sour cream, chilies, onions & salt. Stir in 1 cup of the cheese, spoon about 1/3 cup chicken mixture down center of each tortilla. Roll tortillas and place seam side down in prepared baking dish. Pour remaining 1 can enchilada sauce over the top and sprinkle with remaining 1 cup cheese. Bake for 35 minutes or when bubbly & slightly browned on top.

Mandi's Quesadilla Pizza
I make my Quesadilla's a lot, People who try them always ask for them again. One night I had some leftever Quesadilla filling and a leftover pizza crust (from the Taco Pizza venture) so I made myself a Quesadilla Pizza it was YUMMY!! Next time I'm going to try to make SURE and have leftovers... LOL!!
Mandi's Quesadilla Pizza
1 Ready Made Pizza Crust (or make your own)
1 lb of cooked and diced Chicken
One onion Chopped
One Bell Pepper Chopped
One Red Pepper Chopped
1 large can of mushroms
2 Cups of Monterey Jack Cheese
Sautee onion, peppers & Mushrooms in olive oil, butter & Garlic powder, salt and pepper until translucent, add chicken and simmer for flavor. Drain oil/butter and add on crust, add Cheese & Bake until HOT! YUMMY!!!

My Taco Pizza
So, We love Pizza, I've discovered some pretty yummy ready made Pizza Crust at the Deli in Wal-Mart, I just rub them down with Olive oil, add my toppings and bake! Jake had bought a frozen Tony's Pizza that was called "Taco Pizza" we baked it one weekend for lunch and it was pretty good actually, I'm never one to "brag" on frozen foods, So it gave me the idea to make my own "Taco Pizza" so here it is! Jake and Ashley LOVED it!!!
Mandi's Taco Pizza
1 premade Pizza Dough (or make your own if you wish)
1 can of Pizza Sauce
1 lb of ground Beef
1 Pkg. of Taco Seasoning
1 lb of Mexican Cheese Blend
1 large can of sliced olives
Make your Taco meat as usual with Taco Seasonings. Spread crust with Pizza Sauce, then Layer cooked Taco Meat, Then layer cheese then sliced Olives, Bake until hot!! YUMMERS!!
