Weight Watchers Pumpkin Muffins
my Aunt printed out the recipe for me a long time ago from the WW's website. I can't seem to find the recipe on there anymore so I wanted to type it up and post it here. These are so yummy! Jake asks me to make them all the time. So give them a try even if you don't follow WW's :o)

Ingredients
1 Serving cooking spray (5 one-second sprays per serving)
18 1/4 oz. unprepared yellow Cake Mix
12 oz. canned pumpkin
1 tsp. ground Cinnamon
1/2 tsp ground nutmet
1/4 tsp ground cloves
Instructions
Coat two, 12 hol muffin pans with cooking spray
Combine cake mix, pumpkin & Spices in a large bowl and beat until light.
Divide batter among muffin tins and back according to directions for the
cake mix. Yields 1 muffin per serving.

I actually make a very similar recipe but with fewer ingredients. Here's my variation:
1 box Spice Cake
1 can (15-16 oz) packed pumpkin
1/3 cup water
1/2 cup mini chocolate chips
Preheat oven to temp on box.
Spray muffin pan with cooking spray. Put cake mix in bowl and break apart really well with a fork. Add water and mix well - add pumpkin and again mix well. Fold in chocolate chips. Fill each muffin tin halfway. Smooth tops with water on your fingertips. Bake according to directions on box (mine turned out perfect at 20 minutes). Should make approx 24 muffins - 2 pts. each. I have made a double batch and they work out great too - and I also freeze them and pull them out one by one. 25-30 seconds in microwave thaws them perfectly. Yum! These are my secret weapon for sweets cravings.
