Baked Spaghetti!



Baked Spaghetti

This was very, very good, what we liked most about it was that it had such a different taste from anything we've eat before!

Ingredients

* 1 c. chopped onion

* 1 c. chopped green pepper

* 1 tbsp. butter or margarine

* 1 (28 oz.) can tomatoes with liquid, cut up

* 1 (4 oz.) can mushroom stems and pieces, drained

* 1 (2 1/4 oz.) can sliced ripe olives, drained

* 2 tsp. dried oregano

* 1 lb. hamburger, browned

* 12 oz. spaghetti, cooked and drained

* 2 c. shredded Cheddar cheese

* 1 can cream of mushroom soup

* 1/4 c. water

* 1/4 c. grated Parmesan cheese Directions


1. In a large skillet, saute onion and green pepper in butter until tender.


2. Add tomatoes, mushrooms, olives, and oregano.


3. Add ground beef.


4. Simmer, uncovered for 10 minutes.


5. Place half of the spaghetti in a greased 13x9x2-inch baking dish.


6. Top with half of the vegetable mixture. Sprinkle with 1 c. cheddar cheese.


7. Repeat layers.


8. Mix soup and water until smooth; pour over casserole.


9. Sprinkle with Parmesan cheese.


10. Bake, uncovered, at 350 degrees for 30 to 35 minutes. Six to 8 servings

Taco Soup...

Taco Soup

This was so yummy!!!

2 pounds ground beef
2 cups diced onions
2 (15 1/2-ounce) cans pinto beans
1 (15 1/2-ounce) can pink kidney beans
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 1/2-ounce) can Mexican-style stewed tomatoes
1 (14 1/2-ounce) can diced tomatoes
1 (14 1/2-ounce) can tomatoes with chiles
2 (4 1/2-ounce) cans diced green chiles
1 (4.6-ounce) can black olives, drained and sliced, optional
1/2 cup green olives, sliced, optional
1 (1 1/4-ounce) package taco seasoning mix
1 (1-ounce) package ranch salad dressing mix

Corn chips, for serving Sour cream, for garnish Grated cheese, for garnish Chopped green onions, for garnish Pickled jalapenos, for garnish
Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

WW Pumpkin Muffins

my Aunt printed out the recipe for me a long time ago from the WW's website. I can't seem to find the recipe on there anymore so I wanted to type it up and post it here. These are so yummy! Jake asks me to make them all the time. So give them a try even if you don't follow WW's :o)

Ingredients
1 Serving cooking spray (5 one-second sprays per serving)
18 1/4 oz. unprepared yellow Cake Mix
12 oz. canned pumpkin
1 tsp. ground Cinnamon
1/2 tsp ground nutmet
1/4 tsp ground cloves
Instructions
Coat two, 12 hol muffin pans with cooking spray
Combine cake mix, pumpkin & Spices in a large bowl and beat until light.
Divide batter among muffin tins and back according to directions for the
cake mix. Yields 1 muffin per serving.

Robin Miller's Slow Cooker Sweet and Sour Pork

Robin Miller's Slow Cooker Sweet and Sour Pork

3 cups cubed peeled potatoes (Idaho or Yukon gold)
1 cup chopped onion
3 pound pork roast, trimmed (I used a pork loin)
4 cloves garlic, minced
1 cup water
1/2 cup ketchup
3 tablespoons red wine vinegar (didn't use didn't have)
2 tablespoons light brown sugar
2 tablespoons reduced-sodium soy sauce
1 teaspoon Dijon mustard
1/2 teaspoon ground black pepper
Salt

Arrange potatoes and onion in bottom of slow cooker. Place pork on top of potatoes and onion. Spread garlic all over pork. In a medium bowl, whisk together water, ketchup, vinegar, sugar, soy sauce, mustard, black pepper and salt. Pour mixture over pork. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. Slice pork crosswise into thin slices and serve 12 ounces for this meal. Serve with all of potatoes, onions, and sauce.

Paula Deens, BBQ Meat Loaf


This recipe is interesting because my friend Shar made it for her family and She said it wasn't very good and that none of them liked it. I Made this for my family and they LOVED it! Jake said it was a definate make again and Ashley my picky one even loved it. I think everyone has a different idea of what their meatloaf should be like :)

Barbeque Meat Loaf

1 1/2 pounds ground beef
1 cup fresh bread crumbs
1 onion, diced
1 egg, lightly beaten
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 (8-ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup water, to thin sauce if necessary

Preheat oven to 350 degrees F. Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf. Bake for 1 hour, basting every 15 minutes with the pan juices.

Chocolate Chip Pumpkin Bread


This was a really good recipe. The only thing was that 1.5 cups of choc chips seemed like too much to me and Jake, It made the chocolate over power the pumpkin flavor but it was yummy and if I ever make it again I'll do less CChips :) Also, I seperated this batter into two loaf pans, My one loaf pan wasn't big enough to hold the batter :)

Ingredients:

3 C all purpose flour
2 tsp. ground cinnamon
1 tsp. salt
1 tsp. baking soda
4 eggs
2 C sugar
2 C cooked or canned pumpkin
1 1/4 C vegetable oil
1 1/2 C semi-sweet chocolate chips

Directions:In a large bowl, combine the flour, cinnamon, salt & baking soda. In another bowl, beat the eggs, sugar, pumpkin & oil. Stir into dry ingredients just until moistened Fold in chocolate chips. Pour into regular sized loaf pan. Bake at 350 degrees for 60-70 minutes or until a toothpick inserted near th center comes out clean. Cool for 10 minutes before removing from pan onto wire rack.

Betty White's Chicken Wings..

Betty White's Chicken Wings

Recipe 6 servings

3 lbs chicken wings (use the plumpest chicken wings you can find)
1/2 cup margarine or butter
1 cup soy sauce
1 cup brown sugar
3/4 cup water
1/2 teaspoon dry mustard
3/4 teaspoon garlic powder (optional)

Arrange wings in shallow baking pan. Heat butter, soy sauce, sugar, water mustard and garlic powder if using, until butter and sugar melt. Cool; pour over wings and marinate at least 2 hours, turning once or twice. Bake in same pan at 375F for 1-1/4 to 1-1/2 hours, turning occasionally. (Use the plumpest chicken wings you can find; if your market only has the normal scrawny ones, don't cook longer than 75 minutes) Drain on paper towels and serve.

Mexi- Tortilla Casserole


This was simple & good. Alot like a Nacho type thing but had great flavors, I did not use the sour cream of Green Chillies, I love them but they are not favorites in my house so I omitted them.

1 Tablespoon Vegetable Oil
1 Small Onion, Chopped
1 lb ground pork (or ground beef)
1 Can (14oz) diced Tomatoes
1 Teaspoon dried Oregano
1/4 Teaspoon Salt
1/4 teaspoon Ground Cumin
1/4 Teaspoon black pepper
1 1/2 cups shredded pepper jack or taco-flavored cheese
2 Cups Tortilla Chips
1/2 Cup Sour Cream
1 can diced green chili's, drained
2 Tablespoons minced Cilantro

1. Preheat Over to 350

2. Heat oil in large skillet. Add onion, cook and stir 5 minutes or until tender. Add meat and cook until browned. drain fat. stir in tomatoes, oregano, salt, cumin and pepper. spoon into 11x7 dish. sprinkle with cheese. arrange tortilla's chips over cheese. bake 10-15 minutes until cheese melts.

3. Combine Sour creama nd chiles in small bowl, mix well, dropped by spoonfuls over baked casserole, sprinkle with cilantro

Chicken & Linguine In Creamy Tomato Sauce


This was very good & yet it was different from a lot of the things I've cooked, Give it a try!

Chicken & Linguine in Creamy Tomato Sauce

1 tablespoon olive oil
1 pound boneless, skinless chicken breast, cut into 1/2 inch strips
1 jar (26oz) Ragu Pasta sauce
2 cups water
8 oz linguine
1/2 cup whipping or heavy cream
1 tablespoon fresh basil leaves, chopped In skillet,

heat oil over med heat and brown chicken. Remove chicken and set aside. In same skillet, stir in pasta sauce and water, bring to boil over high heat. Stir in uncooked linguine and return to boil. Reduce to low and simmer covered, stirring occasionally until linguine is tender. Stir in cream and basil. Return chicken to skillet and cook 5min.

Pizza Nacho's


I got this recipe from Shar's Blog. Oh my, this was so yummy!!!

Pizza Nachos

1 lb ground beef
1/2 jar ragu pasta sauce
1 pkg pepperoni (1 cup)
1 bag tortilla chips
2 cups shredded cheese (marble, cheddar or mozzarella)
*YOUR favorite toppings*

DIRECTIONS:In skillet, brown the ground beef (and fresh mushroom if desired), once browned, add ragu and heat for about 5 more minutes.PREHEAT oven at 350*On pizza platter OR cookie sheet, spread the bag of tortilla chips. pour the sauce evenly over the chips, sprinkle with desired toppings (pepperoni, red peppers, etc).. and sprinkle cheese.BAKE at 350* for 5 minutes.

Creamy Burrito Casserole Recipe



I can't remember exactly where I got this recipe but it was one of my choices for my week on recipe challenge a few weeks ago and I finally got to try it this week. It was way yummy. Jake didn't care a lot for it because of the sour cream... But it was good!
Creamy Burrito Casserole Recipe

1 lb ground beef or ground turkey
1/2 medium yellow onion, chopped
1 (1 1/4 ounce) package taco seasoning
6 large flour tortillas
1 (16 ounce) can refried beans
2-3 cups shredded taco cheese or cheddar cheese
1 (10 3/4 ounce) can cream of mushroom soup
4 ounces sour cream
jarred hot sauce, if desired to spice it up

Brown ground meat/turkey and onion; drain. Add taco seasoning and stir in refried beans. Mix soup and sour cream in a separate bowl. Spread 1/2 sour cream mixture in the bottom of a casserole dish. Tear up 3 tortillas and spread over sour cream mixture. Put 1/2 the meat bean mixture over that. Add a layer of cheese. You could put some hot sauce on this now. Repeat the layers. Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.

Crockpot Chicken & Stuffing


I've made things like this before in the crockpot and didn't care for them, But I thought this was pretty tasty.. and easy and cheap to boot!

Crockpot Chicken & Stuffing

4 chicken breasts (halves) (I used chicken tender strips)
1 pkg. Stove Top Stuffing
1/2 cup water
1 can FF cream of mushroom soup (used regular not FF)
1 cup chicken broth

Place chicken on bottom of Crockpot. Pour broth over the chicken. Mix together the stuffing, soup, and water, and place on top of the chicken.Cook on low for 7 hours.
Serves 4

This was from my "Casserole" Themed week on RecipeChallenge. It was yummy.. but I did change the recipe up a bit, changed are inside the ( )'s

1 Tablespoon Vegetable oil
1 small onion, chopped
1 jalapeƱo pepper, seeded and minced (didn't use)
1 lb ground Turkey (used ground beef)
1 package frozen mixed veggies
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
2 cans condensed cream of golden mushroom soup
1 package refrigerated breadsticks

Preheat oven to 350. Crease 13x9 dish Heat oil in skillet add onion and jalapeno and cook until tender, add turkey cook until done. add veggies and cook until thawed, stir in soup cook 5 to 10 minutes. spoon mixture into dish. Pull & Stretch breadsticks to lengthen, pressing ends together if necessary to reach across casserole in lattice pattern. Bake 14 to 20 minutes.

4 boneless skinless chicken breasts
1 (10 3/4 ounce) can cream of chicken soup (not cream of mushroom!)
1 1/2 cups crushed Ritz crackers
1/2 cup butter, melted

Place chicken in casserole dish. Spread soup over chicken. Sprinkle crackers over soup. Pour butter over crackers. Bake 350 for 45 minutes.

Pork Chop Potato Casserole

PORK CHOP POTATO CASSEROLE

8 pork chops (boneless is best)
1 teaspoon seasoned salt
1 tablespoon veg oil
1 can condensed cream of celery soup, undiluted
2/3 cup milk
1/2 cup sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
1 pkg. frozen shredded hash brown potatoes
1 cup shredded cheddar cheese, divided
1 can french fried onions, divided

Sprinkle chops with seasoned salt. In skillet, brown chops on both sides in oil. In large bowl, combine soup, milk, sour cream, salt and pepper. Stir in hashbrowns, 3/4 cup cheese and half of fried onions. Spread into greased 13x9 dish. Arrange pork chops on top. Cover and bake at 350 for 40min. Uncover and sprinkle with remaining cheese and fried onions. Bake uncovered for 10min or until potatoes are tender, cheese is melted and meat juices run clear.

Grandma's Soft Sugar Cookies


These are so good, not too sweet, sweet enough and so soft!!!

Grandma's Soft Sugar Cookies Recipe

2 dozen cookies

2 large eggs
2/3 cup vegetable oil
2 teaspoons vanilla
3/4 cup white sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt

Beat together eggs, oil, vanilla and sugar; add flour, baking powder and salt and mix well.
Drop by heaping teaspoon approx 3" apart on an ungreased cookie sheet.

I sprinkled with sugar...

Bake at 400°F for 6-10 minutes or just until lightly golden.

Cheesy Chicken Subs



This was my choice for Marey's week on Recipe Challenge, It was delicious!! The chicken really had a great taste, I do have a suggestion reserve a little of the dressing to mix up for some "dressing" on the bread.

Cheesy Chicken Subs

12 oz. chicken breast cut into strips
1 envelope Parm. Italian or Caesar Salad dressing mix
1/2 cup sliced red onion
1/4 cup olive or veg. oil
4 sub sandwich rolls
4 slices Swiss cheese

Place chicken in bowl; sprinkle with dressing mix. In skillet sautƩ onion in oil for 3 minutes. Add chicken, cook until done.

Spoon mixture onto roll bottoms and top with cheese.
Broil 4" from heat until melted.

Soupy Burgers

This was a pick from Brie's week. This was soooo good!!! The "gravy sauce" was great over mashed potatoes, I will definately make this one again & very soon!!

Soupy burgers

Brie's Week: 5 Indredients or less

1 1/2 lbs hamburger, divide in 5 patties
2 (10 ounce) cans condensed vegetable beef soup
1 (14 ounce) can tomatoes, Diced
1/2 cup small onion, diced
3 cups mashed potatoes

Brown Burgers in a frying pan.Remove burgers to plate .Drain excess.fat.Leave enough to saute onion.Add tomatoes with juice.Add soup and bring to a low boil.Do Not addany water.Return burgers to soup mixture and simmer about 30 to 60 minutes covered.Stir once every few minutes so they don't burn.Place Burgers on a plate next to a dollup of potatoes and cover both with sauce and enjoy.

Caramalized Chicken Wings

I snagged this recipe from Recipezaar. It was no disappointment, It was so tasty! Definately a repeat recipe. Everyone loved it!

Caramelized Chicken Wings Recipe

3 lbs chicken wings (I bought the wingette's from wal-mart)
2 tablespoons olive oil
1/2 cup soy sauce
2 tablespoons ketchup
1 cup honey
1 garlic clove, minced, to taste
1 pinch salt
1 pinch ground black pepper

Preheat oven to 375 degrees. Place chicken in a 9x13-inch baking dish. Mix the oil, soy sauce,ketchup,honey,garlic,salt and pepper and pour over the chicken. Bake at 375 degrees F (190 degrees C) for one hour or until sauce is caramelized. (My sauce didn't get as thick as I was expecting but I kept basting while it was cooking to get the flavor all around)

Redneck Casserole


Do not let the name of this recipe off-put you! LOL!! It was so simple and so delicious! We will definitely be making this one over and over again! This was my choice for Brie's week on our Recipe Challenge group!

Bries Week: 5 Ingredients or less

1 (28 ounce) can baked beans
6-8 hot dogs
4 cups tater tots
1 cup sharp cheddar cheese, shredded

Set your oven to 450.Dump your can of baked beans into a casserole dish. Set the dish aside.Cut up your hot dogs into bite sized pieces and throw those into your casserole dish and mix until dogs are well coated with baked bean sauce.Cover the bean and dog mixture with tater tots. We usually use a couple handfuls. Use as many as you'd like. Just make sure to cover the mixture completely.Place the casserole dish in the oven for 1/2 an hour or until tater tots are golden brown. When Redneck Casserole is all cooked up, turn off the oven and sprinkle the top with cheese.Redneck Casserole is completely done when cheese is melted and you just can't take it anymore -- dig in!

Easy Beef Enchilada's

This was so easy I was afraid it wouldn't be all that good, Turns out it is delicious! I did forget to take a picture of it though, But if you'd like to see a picture of it check out Brie's Blog :o) I'm sure she won't mind!

1 lb ground beef
1 packet taco seasoning
3 cups salsa (your favorite)
16 ounces shredded cheddar
10 or so corn tortillas (I used flour instead)

Brown Beef in skillet. Add taco seasoning and about 1 cup of salsa(more or less to taste) to beef and heat until salsa is warm.Remove from heat.Spoon meat mixture and cheese into totillas, making sure not to over fill.Roll up and place in 13x9 baking dish.The enchiladas will pack together tightly.Spread remaining salsa over enchiladas and sprinkle with remaining cheese.Bake at 350 until cheese is melted and edges of tortillas start to brown and crisp.(aprox. 10-15 mins.).

1/2 c butter, softened
1 cup sour cream
1 egg
1 c all purpose flour
1 t baking powder
1 t salt
16 oz frozen mixed vegetables, thawed
2 c cubed, cooked chicken or turkey
1 10 3/4oz can cream of mushroom soup, UNdiluted
1/2 c chopped onion
1/2 c shredded cheddar

In small bowl, cream the butter and sour cream. Add egg; beat well. Combine the flour, baking powder and salt and add to creamed mixture. Spread into a greased 3 qt casserole dish.In a large bowl, combine the veggies, chicken , soup and onion. Pour over crust, sprinkly with cheese. Bake, uncovered, at 400* for 35-40 minutes or until heated through.

Chicken with Tomato Basil Cream Sauce


This recipe was snagged from Brie's Blog. It looked so yummy when she made it I HAd to give it a try, I served it over rice and it was a hit, very yummy! This ones a keeper for sure.

Chicken with Tomato Basil Cream Sauce

Ingredients

4 boneless, skinless chicken breast halves (about 1-1/4 pounds), pounded
3 tablespoons butter, divided
2 plum tomatoes, chopped
1 small onion, chopped
1/4 teaspoon salt
1/4 cup chicken broth
1/2 cup whipping or heavy cream
2 tablespoons loosely packed fresh basil leaves, cut in thin strips

Season chicken, if desired, with salt and ground black pepper.In 12-inch nonstick skillet, melt 2 tablespoons butter over medium-high heat and cook chicken 8 minutes or until chicken is thoroughly cooked, turning once. Remove chicken and set aside.In same skillet, melt remaining 1 tablespoon butter and cook tomatoes, onion and salt, stirring occasionally, until tomatoes are tender. Stir in broth and cook, stirring occasionally, 2 minutes. Stir in cream. Reduce heat to low and return chicken to skillet. Simmer uncovered 4 minutes or until sauce is thickened and chicken is heated through. Garnish with basil.

Best Grilled Pork Chops


This was a recipe that I have sent in for my "Pork Chop" themed week on Recipe Challenges. I finally got around to trying it out and they were VERY tasty the marinade gave them the best flavor!
Best Grilled Pork Chops
1/2 cup water
1/3 cup light soy sauce
1/4 cup vegetable oil
3 tablespoons lemon pepper seasoning
2 cloves garlic, minced
6 pork loin chops, fat removed
In deep bowl mix all marinade ingredients.Marinate at least 2 hours.Remove from marinade and cook over medium heat on greased grill about 15 minutes or until done.

Tuna Casserole

Another I got from Recipezaar... Was delicious!

Tuna Casserole Recipe

4 servings 45 min 15 min prep

8 ounces egg noodles
1 (10 1/4 ounce) can cream of celery soup
1/2 cup mayonnaise
3/4 cup evaporated milk
1 cup grated cheddar cheese, divided
1/2 cup finely chopped celery
1/2 small onion, finely chopped
4 ounces mushrooms, drained (optional)
1 teaspoon black pepper
1 (7 ounce) can tuna, with juice

Cook egg noodles to al dente in boiling salted water; drain well. Preheat oven to 325°F. Mix all ingredients together in a large casserole dish, reserving 1/2 cup of cheese. Sprinkle reserved cheese over the top. Bake for 30 minutes. Serve hot.


Treebeard's Red Beans (and rice)



I got this recipe from Recipezaar.. It was very tasty & Spicey so if you don't want the spicey omit the hot stuff.. LOL!!
Treebeard's Red Beans (And Rice)

This recipe is quite a favorite at Treebeards' restaurant in Houston.

6 servings
2½ hours 20 min prep

1 lb dried red kidney beans
2 quarts water
2 medium onions, chopped
2 stalks celery, with leaves, chopped
1/2 large bell pepper, choppped
2 1/2 teaspoons salt
1 1/2 teaspoons thyme
1 1/2 teaspoons oregano
1 1/4 teaspoons garlic powder
3/4 teaspoon cayenne pepper (hot stuff)
2 bay leaves
1 lb smoked sausage, cut in 1/2 " slices

Sort and wash red beans. In a large soup pot, add 2 qrts cold water and red beans. Let soak overnight. (To speed up the process, you can bring them to a boil, simmer 2 minutes, remove from heat and let stand 1 hour before the next step.) DO NOT DRAIN WATER!

Add onions, celery, and bell pepper to beans and bring to a boil. Cover, and reduce heat to simmer about 1 1/2 hours, or until beans are soft. DO NOT STIR MORE THAN NECESSARY.
Stir in seasonings and sausage. Simmer 30 minutes more. Meanwhile cook a pot of rice, and serve the beans over the hot cooked rice, garnished with shredded cheddar cheese and chopped green onion.

Note: Don't stir more than necessary - you don't want mushy beans. If you want thicker beans, remove the lid during the last 30 minutes of cooking time, or remove 1/2 cups of the beans and mash them before returning to the pot.

Shar's Scalloped Potatoes

This recipe came from my very sweet friend Shar, She shared it with our recipe challenge group and I tried it with my Beef Mushroom Tips this past week, I did cut the recipe in half and it made more than enough for the three of us who don't eat baby formula.. LOL!! It was absolutely Delicious Shar! Thank you so much!

Scalloped Cheese Potatoes

INGREDIENTS
4 pounds potatoes, peeled and thinly sliced
2 (10.75 ounce) cans condensed cream of mushroom soup, undiluted
1/4 cup butter or margarine, divided
2 cups shredded Cheddar cheese, divided

DIRECTIONS
In a large bowl, combine potatoes and soup. Layer half of the mixture in a greased 13-in. x 9-in. x 2-in. baking dish. Dot with half of the butter and sprinkle with half of the cheese. Repeat layers. Bake, uncovered, at 350 degrees F for 60-70 minutes or until the potatoes are tender.

Pork Chops Yum-Yum


Found the recipe on Recipezaar looking for a new way to make pork chops. I cannot begin to tell you how yummy these were... I doubled the recipe for the sauce.. and the pork chops were so...tender.. YUM-YUM

2-4 pork chops, 1/2 inch to 3/4 inch thick
1/4 cup chicken broth
1/8 cup honey
1/8 cup soy sauce
1 tablespoon ketchup
1/4 teaspoon ginger
1/8 teaspoon garlic salt

Brown chops on both sides. Place in greased casserole dish. Mix all remaining ingredients and pour over pork chops. Bake, uncovered, at 350 for one hour.

I searched for these during a brownie craving a few days ago, They were VERY VERY extremely rich... Jake loved them.. They were almost TOO rich for me.. But I'm not a "sweets" type person...

1 2/3 cups granulated sugar
3/4 cup butter or margarine, melted
2 tablespoons water
2 large eggs
2 teaspoons vanilla extract
1 1/3 cups all-purpose flour
3/4 cup Nestle Toll House baking cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped nuts (optional)
powdered sugar

PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan. COMBINE sugar, butter and water in large bowl. Stir in eggs and vanilla extract. Combine flour, cocoa, baking powder and salt in medium bowl; stir into sugar mixture. Stir in nuts. Spread into prepared baking pan. BAKE for 18 to 25 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack. Sprinkle with powdered sugar. Cut into bars.

Mushroom Beef Tips


This was a pick from Teresa's week on the Recipe Challenge group. I've tried a lot of recipes for this but never found one I liked enough to make again, This one will definately go in the family cookbook! It was so tasty!!

MUSHROOM BEEF TIPS

2 lbs beef stew, cut into small cubes
1/4 c. butter
1 med. clove garlic, minced
2 cans mushroom soup
1 tablespoon finely chopped onion (I used more)
1/2 cup watercooked noodles of choice
*optional--can of mushrooms*

Brown beef and onions in butter. Add remaining ingredients and cover.
Cook 2 hours or until tender. Stir at least once. Serve over noodles of choice.

Quesadilla's Burgers & Seasoned Potatoes


WOW! Made these last night.. They were one of my selections for my Quesadilla themed week. These were so YUMMY!! Everyone loved them.. even my picky girl!! I completely cooked this entire meal on the grill which was awesome!! My potatoes below were just seasoned with Basil, Oregano, salt, pepper and olive oil..

8 burgers 25 min 5 min prep

1/2 lb ground turkey
1/2 lb ground beef (I just used all beef)
salt
pepper
8 slices monterey jack pepper cheese (I used monterey jack no pepper)
8 small flour tortillas
guacamole (didn't make this)
sour cream
fresh salsa (in a jar is fine)
nonstick cooking spray (didn't use this..
Combine the turkey and beef together. Form into four large patties. Pat them down so they are about 1/2 inch thick or thinner. Salt and pepper to taste. Heat an electric skillet to Med-high heat. Spray with non-stick cooking spray, and then cook your patties until desired doneness. Cut the burger patties in half so you have 8 "half moons" and put a slice of pepper jack on each half, let cheese melt and keep warm. Meanwhile, spray your skillet again and place the tortillas on one at a time lay them on the skillet to warm and lightly brown. Just before the tortilla is done, lay one of the burger halves,straight side in the middle, on the tortilla. Remove from heat and place quacamole, sour cream ,and salsa in the tortilla before your cheese cools, fold up taco style and enjoy.

INGREDIENTS

2 eggs
1/2 cup dry bread crumbs
1 envelope onion soup mix
1 1/2 pounds lean ground beef
2 tablespoons all-purpose flour (didn't use this)
6 medium potatoes, peeled and thinly sliced
1 (10.75 ounce) can condensed cream of celery soup, undiluted
1 cup milk
Paprika (didn't use this)

DIRECTIONSIn a bowl, combine the eggs, bread crumbs and soup mix. Crumble beef over mixture and mix well. Roll into 1 inch meatballs, and place on a cookie sheet. Bake at 425* for 15 minutes. Meanwhile.. peel and cut potatoes into thin slices as meatballs cook. (i used red potatoes and didn't peel)
Place half of the potatoes in a greased 2-1/2-qt. baking dish. Top with meatballs and then remaining potatoes. In a bowl, combine soup and milk until blended; pour over potatoes. Sprinkle with paprika if desired. Cover and bake at 350 degrees F for 60-65 minutes or until the potatoes are tender.

Mandi's Mom's Spanish Rice

Now I know we're all sort of partial to our Mothers cooking. But My Mom got this recipe from an old Mexican ladie selling her homemade tamales in front of mexican food grocery store.. This is by far the BEST Spanish Rice I have ever eaten.. anywhere... I'm warning you.. this makes ALOT!!!

Mandi's Mom's Spanish Rice

2 Cups long grain Rice
1 bell pepper diced (mom didnt' use this in hers, but I Added it)
1 small onion diced
2 cloves of Garlic Minced
Butter - LOTS OF it!! 1 Stick at least.
2 Cans of Diced Tomatoes
3 Cups of Chicken Broth
(I almost always end up adding more, So try 4 cups instead)
Salt, Pepper to taste
1 tsp. Cumin or more to taste...

Variation: one time I bought tomatoes with green chili's in them and it gave it spice which was yummy too!!

Melt lots of butter and sautee' Bell Peppers, Onion and Garlic together... cook until done to your likeness.. add Rice and brown... add remaining ingredients, cover and simmer until rice is cooked...

This is the second time I've made this recipe I believe, It makes a lot if you have a big family to feed.. I made it with my Mom's recipe for Spanish rice which I make all the time and will be sharing the recipe for next!

INGREDIENTS:

2 pounds ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (2 ounce) can black olives, sliced
1 (4 ounce) can diced green chili peppers
1 (10 ounce) can diced tomatoes with green Chile peppers
1 (16 ounce) jar taco sauce
2 (16 ounce) cans refried beans
12 (8 inch) flour tortillas
9 ounces shredded Colby cheese ( I Just use any I have on hand)

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C). In a large skillet over
medium heat, saute the ground beef for 5 minutes. Add the onion and
garlic, and saute for 5 more minutes. Drain any excess fat, if desired.
Mix in the olives, green Chile peppers, tomatoes with green chile peppers,
taco sauce and refried beans. Stir mixture thoroughly, reduce heat to low,
and let simmer for 15 to 20 minutes.

Spread a thin layer of the meat mixture in the bottom of a 4 quart casserole
dish. Cover with a layer of tortillas followed by more meat mixture, then a
layer of cheese. Repeat tortilla, meat, cheese pattern until all the tortillas are
used, topping off with a layer of meat mixture and cheese.

Bake for 20 to 30 minutes in the preheated oven, or until cheese is slightly
brown and bubbly.
